Ingredients: 2 tbsp olive oil, divided 1 large sweet potato, diced 1 lb ground turkey or chicken (can also use ground beef) 1 yellow onion, diced 2 cloves garlic minced Check below.
First. Preheat oven to 400 F. Toss sweet potato with 1 tbsp olive oil in an 8x11 or 9x13 baking dish then season with salt & pepper. Bake for 15-20 minutes until sweet potato is fork tender.
And then, Meanwhile, heat remaining tbsp olive oil over med-high heat in a large skillet. Add ground turkey, onions and garlic, breaking up meat with a slotted spoon, then add chili powder, cumin, paprika and salt. Mix to combine well and cook for 5-6 minutes until meat starts to brown.
After it, Remove sweet potatoes from oven and add in turkey mixture along with bell peppers. Top with cheddar cheese then bake for 10 minutes until cheese is fully melted.
